Do I still need WooCommerce stock management?

Yes, keep "Manage stock" enabled in WooCommerce. Fulfiro pushes the available quantity to WooCommerce so your storefront displays the correct stock. WooCommerce is the customer-facing layer; Fulfiro is the operations layer behind it.
